Founded in 1940, Fromagerie St-Guillaume's experienced cheese experts now process more than 27 million liters of milk per year as Fresh Cheddar (Le P'tit Frais), Mild Cheddar, Medium Cheddar (6 months), Old Cheddar (1 year) and Extra-Old Cheddar (2 years), Halloumi (Baya, grilling cheese), Parmesan, Brick, Monterey Jack, Swiss (2017 Caseus finalist), Emmental, Pizza Mozzarella, Curled-Style Tortillons and Le Cantolait, a 4 months surface-repined Cantal-type cheese (winner of three Caseus awards).Recognized for its high adaptability to the needs of hotels, restaurants and institutions (HRI) as well as retail customers, all cheeses are offered under private labels or under the St-Guillaume brand name, in blocks, wheels, cubes, slices or grated and in sizes ranging from 500 g to 18 kg.In addition to meeting the Canadian Food Inspection Agency's federal requirements for interprovincial trade, we comply with GFSI (Global Food Safety Initiative) standards with our Level 2 SQF certification. We are also certified Kosher for some of our cheeses.
