To be fair, our Saffron is not for everyone and quite frankly not everyone knows how to use it. It's more suited to the professional than the amateur. Like a premium wine, only those who really take the time to understand it can coax it to its full potential. It's delicate, temperamental and unforgiving when flowering. It's not a survivor like other Crocus plants, which can grow almost anywhere and thrive even if neglected. Saffron needs constant care and attention. In fact, it can only grow in really specific tucked away corners of the world, like Central Otago, where summers are hot and dry and winters are cold. Its flavour, colour and aroma are perhaps the most brilliant, subtle and exotic on the planet. With over 5,000 years of cultivation no wonder it is called red gold. We know what happens with our Saffron from the time it flowers to the time it's packaged. In 2015 and 2016 we had our Saffron tested (by the University of Otago) against the stringent international standards for Saffron quality (ISO 3632).
