The ASIAGO CHEESE Consortium was set up in 1979 in order to:- promote the ASIAGO CHEESE all over the world, through marketing activities;- control the quality of ASIAGO CHEESE, ensuring the correct use of brands, markings and seals.The regulatory board represents 1,630 dairy farmers and 46 cheese makers and cheese-seasoning workshops.The Consortium has been the first, in Italy, to implement and maintain a Quality Management System fulfilling the requirements of the UNI EN ISO 9001:2000 standards. ASIAGO is a P.D.O. (Protected Designation of Origin) Italian cheese, recognized and chosen by connoisseurs and gourmets all over the world. It is produced with methods respecting the age-old traditions of cheese-making in the typical zones established by law with milk collected in the same areas. The pasture and feeding of the cows is also controlled. Genuine ASIAGO P.D.O. (D.O.P. in Italian) is the cheese marked with the seals of the Consortium on the side of each form. These markings guarantee the genuine quality and the right flavour. So, if you don't see the seals, you know it's not ASIAGO D.O.P.
