Komaaj's most important goal is to make the dining experience as accessible to those who just know what they like, as it is to those who understand the rich gastronomical culture in which we live.The Pop-up restaurant tells a story in all aspects – from the lush, humid climate allows crops such as tea, rice, citrus to flourish. Nuts, local wild herbs as well as garlic, parsley, cilantro, mint, and spinach are indispensable ingredients used in most local dishes. Pomegranates and the thick-skinned, sour orange "Naranj", are reduced down to make concentrated molasses. The layers of tart and sour flavors combined with fresh local produce gives Gilaki dishes the complex, yet simple flavor.Komaaj's mission is to cultivate a healthy community of people who come together to feast and enjoy good food. Food, prepared as it was done for centuries; herbs freshly cut from the garden, fruits and vegetables from local farms and eggs laid by healthy chickens… simple and sustainable.
