Nuts, local wild herbs as well as garlic, parsley, cilantro, mint, and spinach are indispensable ingredients used in most local dishes. Pomegranates and the thick-skinned, sour orange "Naranj", are reduced down to make concentrated molasses. The layers of tart and sour flavors combined with fresh local produce gives Gilaki dishes the complex, yet simple flavor.Komaaj's mission is to cultivate a healthy community of people who come together to feast and enjoy good food.
