Producers of premium vinegars and verjus. We make all of our products from our family's vineyard in Canada where the weather ranges from very hot to very cold. Minus 8 is the temperature at which many of the grapes are harvested, as with ice wine. We elevate all of the grapes specifically to each product. We make products with passion for creating new flavours, techniques, processes, equipment and methods, but we make products for chefs because they are passionate about the food they create and we love to eat.Production varies yearly, some products to less than 100 cases per year. Quality is the prime focus, quantity is what we get depending on the harvest conditions. Our products are distributed to professional chefs mainly in North America, Europe and Asia.
