We want to revolutionize the world of food, innovating on new sources of sustainable and environmentally friendly proteinProcessed insects can become a real alternative to satisfy the protein needs of the world's population.The proposal to create an insect-based food, and more specifically the cricket (Acheta domesticus) arises from the innovative idea of looking for an alternative source of protein to those that currently exist in the market, with special emphasis on replacing the protein that has its origin in meat (mainly ruminants). According to the United Nations, nine billion people will occupy the Earth in 2050, and to feed that growing population, food production in the developing world should be doubled.In this context, it has been shown that traditional livestock, the main source of protein for humans, is growing at a rate that is considered unsustainable in the future due to its environmental implications (gas emissions, water consumption, etc.). Therefore, we consider that it will be essential to look for sources of alternative proteins that are sustainable with the environment, in order to carry out a healthy diet, but without giving up the absolute intake of meat.
